Butternut Squash Brownies

Who doesn’t love brownies?

I’ve been experimenting with different fat replacers in my baking and today I’ve happily tried frozen (thawed) butternut squash! Give it a try!

1 C frozen(thawed) butternut squash
1/4 C fat-free vanilla or plain yogurt
1/4-1/2 C Smart Butter Spread (melted)
2 egg whites (taking care to carefully adding them to warm butter so as to not cause a scrambled egg!)
2 tsp vanilla extract
1/3 C cocoa powder
1 1/2 C sugar (type is your choice! Turbinado, granulated, I’ve even tried brown sugar and artificial sweetener blends too!)
1 1/2-2 C whole wheat flour (the variance of amount is because at times I’ve used either of those measurements)

Bake in a greased/ floured 9X13 in baking dish for approximately 25 minutes; 350 degree oven

Let me know your thoughts! And if the brownies don’t come out to your liking, let me know!! I’ll make them again and see if there should be changes!! Oh yes! I also used Gevalia 60% cocoa chips! As soon as I took them out from baking, I sprinkled approximately 1/2 cup over the top and smoothed over once melted! Yummy!! They are super fluffy!!! Be sure to let me know what you think!
