Quinoa Salad

Ingredients
  

  • 1 cup quinoa cooked
  • 2 large kale leaves chopped
  • 4 medium grape tomatoes cut in quarters
  • 1/2 medium carrot peeled and grated
  • 1/4 tablespoon red onion diced finely
  • 1/2 medium yellow bell pepper diced
  • 1/4 medium avocado diced
  • 1/4 cup slivered almonds
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon fresh black pepper
  • 2 tablespoons olive oil
  • 1/2 medium lemon juiced

Instructions
 

  • Add all ingredients through almonds to a large mixing bowl. Toss to combine.
  • In a small bowl add salt, pepper, olive oil and juice of lemon. Whisk well. 
  • Drizzle over quinoa and toss to evenly coat. Serve immediately or place in a sealed container; store in the fridge.
